Cabbage Soup Recipe

Cabbage Soup

Ingredients:

  • 1 1/2 tbsp olive oil
  • 1 chopped onion
  • 4 cloves of garlic chopped
  • 5 cups thinly shredded cabbage
  • 1/2 tbsp paprika
  • 1/2 tbsp smoked paprika
  • 3/4 tsp turmeric
  • 3/4 tsp thyme
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp minced onion
  • 1/2 tsp fresh ground pepper
  • 1 lrg can diced tomatoes w/juice (homemade canned is best)
  • 6-7 cups water
  • 3-4 tsp vegetable better than bouillon
  • 3 potatoes cubed
  • Salt & Pepper to taste
  • Tofutti Sour Cream (or any plant based sour cream)

Instructions:

  • Heat olive oil on medium heat and sautée onions and garlic about five minutes
  • Add shredded cabbage and continue to sautée 10-15 mins
  • Add spices and stir for one minute, until fragrant
  • Add tomatoes, water, vegetable bouillon and cubed potatoes
  • Bring to a boil and let simmer over medium heat until potatoes and cabbage are tender
  • Add more salt and pepper to taste if desired
  • Serve with a spoonful of tofutti sour cream as a topping
