
Ingredients:
- 1 1/2 tbsp olive oil
- 1 chopped onion
- 4 cloves of garlic chopped
- 5 cups thinly shredded cabbage
- 1/2 tbsp paprika
- 1/2 tbsp smoked paprika
- 3/4 tsp turmeric
- 3/4 tsp thyme
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp minced onion
- 1/2 tsp fresh ground pepper
- 1 lrg can diced tomatoes w/juice (homemade canned is best)
- 6-7 cups water
- 3-4 tsp vegetable better than bouillon
- 3 potatoes cubed
- Salt & Pepper to taste
- Tofutti Sour Cream (or any plant based sour cream)
Instructions:
- Heat olive oil on medium heat and sautée onions and garlic about five minutes
- Add shredded cabbage and continue to sautée 10-15 mins
- Add spices and stir for one minute, until fragrant
- Add tomatoes, water, vegetable bouillon and cubed potatoes
- Bring to a boil and let simmer over medium heat until potatoes and cabbage are tender
- Add more salt and pepper to taste if desired
- Serve with a spoonful of tofutti sour cream as a topping
