
Ingredients:
- 35ish ripe tomatoes (field tomatoes)
- 1 large can of Heinz tomato juice
- 7 tsp table salt
- 7 tsp white sugar
- 1 Canner
- 7 1L mason jars with new lids
Instructions:
- Make sure all jars and lids are clean and sterilized in boiling water.
- Blanch tomatoes (place in boiling water for one minute then remove).
- Peel tomatoes and take out the leaf/stem.
- Make sure the hard white part of the core is removed if that makes sense - lol.
- Quarter the tomatoes (depending on the size you may cut them in six or eight pieces).
- Place tomatoes in jars.
- Add 1 tsp of salt and 1 tsp of sugar to each jar.
- Top off with tomato juice to the neck of each jar.
- Place lids on jars. Place jars in canner.
- Make sure there is enough water in the canner (you want water just covering the tops of your lids).
- Bring to a boil and boil for 22 mins.
- Remove each jar and place on a counter to cool.
- Wait to hear the satisfying “pops” of the lids sealing - lol.
