Lentil Tacos Recipe

Lentil Taco's

Ingredients:

Lentil Filling:

  • 2 tsp olive oil
  • 3/4 red onion
  • 3 garlic cloves
  • 1 tbsp Mexican chili powder
  • 1 tsp smoked paprika 
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/8 tsp cayenne 
  • 1 cup uncooked green lentils 
  • 2-2 1/2 cups water
  • 1 tsp veggie bouillon

Toppings:

  • Avocados 
  • Tomatoes
  • Vegan Cheese (I like violife)
  • Romaine
  • Green onions
  • Fresh Squeezed Lime 
  • Salsa
  • Vegan Sour Cream (I used Toffuti)

Instructions:

  • Fry red onion and pressed garlic on medium high for about 5 mins (until transluscent). 
  • Add spices and stir until fragrant.  
  • Add water, lentils and veggie bouillon (I use Better Than Bouillon) and let simmer on medium for 20-30 mins until lentils are cooked. 
  • Start with two cups of water and add more as needed. 
  • I find I end up using 2 1/2 cups of water.  Fill tacos with lentils and toppings and enjoy!!!
