
Ingredients:
Lentil Filling:
- 2 tsp olive oil
- 3/4 red onion
- 3 garlic cloves
- 1 tbsp Mexican chili powder
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/8 tsp cayenne
- 1 cup uncooked green lentils
- 2-2 1/2 cups water
- 1 tsp veggie bouillon
Toppings:
- Avocados
- Tomatoes
- Vegan Cheese (I like violife)
- Romaine
- Green onions
- Fresh Squeezed Lime
- Salsa
- Vegan Sour Cream (I used Toffuti)
Instructions:
- Fry red onion and pressed garlic on medium high for about 5 mins (until transluscent).
- Add spices and stir until fragrant.
- Add water, lentils and veggie bouillon (I use Better Than Bouillon) and let simmer on medium for 20-30 mins until lentils are cooked.
- Start with two cups of water and add more as needed.
- I find I end up using 2 1/2 cups of water. Fill tacos with lentils and toppings and enjoy!!!
