
Ingredients:
- 3 Large cans of black beans (Drained)
- 2-3 tbsp Olive Oil
- 1 Chopped yellow onion
- 1 Chopped orange pepper
- 1 Chopped jalapeno ( omit if you don't like spicy )
- 2-3 Garlic Gloves ( pressed)
- 3 tbsp Spice World Taco Seasoning
- 2 Drops cumin + oil ( or 2 tsp cumin )
- 1 tsp Spice World Ghost Pepper ( omit if you please )
- 1/2 tsp Himalayan salt
- 3 tsp Vegetable better than bouillon
- 3/4-1 cup water
- Fresh chopped cilantro ( about 1/4 cup )
- Fresh squeezed lime (1/2 a lime)
Instructions:
- Chop onion & cook on medium high oil about 7 minutes.
- Add chopped orange pepper, cook 5-7 more minutes.
- Add pressed garlic & seasonings & salt.
- Stir until fragrant.
- Add black beans, vegetable bouillon & 3/4 cup water.
- Stir until combined.
- Bring to a gentle boil, then turn down heat to low & let simmer about 20 mins.
- There should be enough liquid to cook the beans, if it's too thick add remaining 1/4 cup of water.
- Once cooked you can press the black beans with the back of a wooden spoon until it reaches your desired consistency.
- Remove from heat & add fresh chopped cilantro & a squeeze of fresh lime.
