Vegan Key Lime Pie

Vegan Key Lime Pie


Pie crust:

  • 2 cups vegan graham wafer crumbs
  • 1/4 cup melted vegan butter
  • 2 tsp raw cane sugar
  • Mix ingredients and press into a glass pie pan. Bake at 400 degrees until lightly browned (about 10 mins)


  • 1 can full fat coconut milk
  • 1/2 cup fresh lime juice 
  • 1 1/2 tsp lime zest 
  • 1/2 cup dark maple syrup
  • 1/2 tsp pure vanilla
  • 5 tablespoons organic cornstarch 
  • Pinch of salt


  • Whisk ingredients into a medium sized pot on medium high and bring to a gentle boil. Lower to medium heat and whisk constantly until it thickens. This will take about five to seven mins. 
  • Filling will continue to thicken in the fridge.  Poor into pie crust and refrigerate overnight
  • Top with coconut whip cream and lime zest if you please. My favourite is the So Delicious brand coconut whipped cream
