
Ingredients:
Pie crust:
- 2 cups vegan graham wafer crumbs
- 1/4 cup melted vegan butter
- 2 tsp raw cane sugar
- Mix ingredients and press into a glass pie pan. Bake at 400 degrees until lightly browned (about 10 mins)
Filling:
- 1 can full fat coconut milk
- 1/2 cup fresh lime juice
- 1 1/2 tsp lime zest
- 1/2 cup dark maple syrup
- 1/2 tsp pure vanilla
- 5 tablespoons organic cornstarch
- Pinch of salt
Instructions:
- Whisk ingredients into a medium sized pot on medium high and bring to a gentle boil. Lower to medium heat and whisk constantly until it thickens. This will take about five to seven mins.
- Filling will continue to thicken in the fridge. Poor into pie crust and refrigerate overnight
- Top with coconut whip cream and lime zest if you please. My favourite is the So Delicious brand coconut whipped cream
